Swiss cheese on toast

This dish is a great way to warm up after a walk in the snow, but you can enjoy it all year round, especially in restaurants serving typical Swiss specialities. It’s a delicious way to use up leftover bread.

Ingredients for 4 people:

4 slices of bread (ideally left over from the day before)

Medium-hot mustard

5 cl of dry white wine

400g semi-hard cheese, sliced; Vacherin Fribourgeois AOP (protected designation of origin) or another type of raclette cheese

Pepper or other spices/seasoning (paprika, curry)
